Savory Mashed Butternut Squash


My family had an amazing dinner miraculously made entirely by me. I honestly think this is the first several course meal I’ve done 100% on my own. *Pats self on back* The meal had savory mashed butternut squash, sweet cinnamon rice and chicken in a peanut tomato sauce. I’ll have all these recipes eventually, but here is the butternut squash:



This isn’t a picture of my own, because I don’t have my camera, but mine looked essentially the same.

1 Butternut squash

olive oil, rosemary, salt, pepper

Preheat oven to 400 degrees F. Cut squash in half, hot dog-ways, and sprinkle the olive oil on the cut side, then sprinkle the spices. Lay cut side up on a baking tray and cover with aluminum foil. In goes an odorless odd-shaped vegetable, out comes a savory smooth side dish. (Or if you’re me or Kim, the main dish)
